Basil Chicken Broccoli Salad is a perfect spring dish with a little sweetness.
/Recipe serves 4
- 3 C fresh broccoli florets I did 1/2 broccoli rabe
- 2 C cooked chicken diced
- 1/2 C jicama chopped
- 1 large crisp apple diced
- 1 1/4 C plain greek yogurt
- 1/4 C red onion diced
- 1/2 C shredded carrots
- 1/2 C raw walnuts rough chop
- 4-5 Basil leaves chopped
- 1 Tbsp grape seed oil
- 2 Tbsp honey
- 1 Tbsp apple cider vinegar
- 2 drops lemon essential oil or 1/2 lemon
- 1/2 tsp paprika
- 1 tsp cinnamon
- salt/pepper
Combine yogurt, honey, lemon, salt/pepper, apple cider vinegar, and grape seed oil into a sm bowl and let sit in fridge for a few hours or overnight. Mix in the rest of the ingredients and fold in, combine well. You could also make this into lettuce wraps, fresh spring rolls or make a salad with fresh spinach or arugula.
