Breakfast sandwich with zucchini noodle patties, and side tasty greens.

Recipe for 2 

Greens

  • 1 bunch kale
  • 2 garlic cloves minced
  • 2 shallot minced
  • 1/3 tsp ground mustard
  • 1/2 tsp paprika
  • 2tbsp apple cider vinegar
  • 1/4 c shredded carrots
  • 1tbsp coconut oil
  • 1/2 tbsp nutritional yeast 

In a sauce pan heat oil, garlic and shallots sauté for 3 min. Then add mustard, paprika and kale; pour apple cider vinegar on top and let it cook on low for a few minutes. Remove from heat and sprinkle with nutritional yeast, and shredded carrots. 

Zucchini noodle patties - Makes 2 patties and could be substituted for bread 

  • 1  egg with yolk and 1 white 
  • 2 zucchini made into noodles
  • 1 tbsp olive oil 
  • 1/4 C yellow onion chopped
  • 2 garlic cloves minced
  • salt/pepper

Preheat 350 F and spray ramekin with a non stick spray. In a sauce pan heat oil, onion and garlic and sauté 3 min. Add noodles and cook for 2 min. Let cool for a few min then place in ramekin add your egg, salt/pepper and bake 5-7 min. 

To assemble the sandwich I chose a spelt english muffin, and a vegetarian sausage patty and finished with a fried egg because thats always better. Get creative and use whatever options fit your needs and preferences.
