Cauliflower Tortilla Breakfast Burritos

Ingredients for tortillas

  • 1 green cauliflower head, and 1/2 white head in food processor
  • 5 basil leaves finely chopped
  • 2 eggs , 1 egg yolk or substitute collagen or flax eggs
  • 1/2 tsp paprika
  • 1 tbsp ground flaxseed
  • salt/pepper

Preheat oven to 375 F, steam the cauliflower for 5 min or microwave 2 min. Make sure to get all the moisture out with paper towels or using a cheesecloth. In a large bowl mix all the ingredients and form into 6 portions using a 1/3 C measure. Spread out evenly on parchment paper and bake 10 min, flip and bake 5-7min. Remove from heat and place on cooling rack; you can use heated skillet to get them seared or use a crepe maker. 

Ingredients for Breakfast filling 

  • 3 field roast sausages or regular pan seared and cooked
  • 1 small bell pepper diced
  • 1 bunch kale
  • 1/4 C diced yellow onion
  • 1 garlic clove minced
  • 1 Lg zucchini diced
  • 1 tbsp apple cider vinegar
  • fresh cilantro
  • 1 ripe avocado
  • 1 tbsp olive oil or ghee 
  • 1/2 tsp of ground mustard
  • sriracha (optional)

In a skillet heat oil. onions and garlic and sauté for a few minutes. Then add your zucchini and bell pepper, cook for 3 minutes. Add greens, ground mustard, and apple cider vinegar and cook 2 to 3 min and remove from heat. When plating this dish you can add avocado or fresh salsa and top with cilantro.
