Spicy spaghetti squash with basil and garlic veggies
/Recipe for 1 squash
- 1 spaghetti squash sliced length wise and seeded
- 2 garlic cloves minced
- 1/4 C diced yellow onion
- 2 handfuls of spinach
- 1/2 bell pepper diced
- 1 zucchini chopped
- 2 tbsp of ghee ( clarified butter) its easier to digest for lactose intolehrant people
- 1 drop lemon essential oil
- 3-4 basil leaves chopped
- 2 roma tomatoes diced
- Balsamic vinegar (optional)
- fresh parsley
- salt/pepper
- chili flakes
Preheat oven to 400 F, place squash face down in a baking dish. Bake for 35 - 45 min. In a saucepan simmer butter, onions and garlic for a few minutes. Then add zucchini, bell pepper and basil, cook additional 3-5 minutes. Add your spinach, lemon, chili flakes and season with salt/pepper. Before serving drizzle balsamic vinegar and top with tomatoes and parsley.
